It's the ZOOBIE Apocalypse!!! RUN!!!

Creepy, right?! Yeah, I totally thought so!! I have never been anything this creepy EVER!!! If you didn't watch the video, then you have no idea what we are, but we are ZOOBIES!!!  Zombie BYU students!!!

I hate Halloween because I am a scaredy cat!! Seriously!! So I still can't believe I let Moydie do this!! Lol he did such a great job, though. Yeah, Moydie did the make up . . .Good, huh?! Freakin' scary!!

Saturday night we had a party to go to with all of Moydie's old high school friends.  It was a blast!! There was great food, great costumes, and a great game!!

The game was called WEREWOLF.  I absolutely love this game! When I was a freshman, we would all get together as a ward and play this game in the dorms.  It was crazy! And yes, it was crazy Saturday night.  A lot of yelling, accusing, and yes, some cries filled with vengeance.  Ha ha it was fun! 

The funniest thing about Saturday night was that someone brought their baby.  Ha ha ha that's so funny!! Lol jk.  The funny part was that he was fixated on me.  He would look at me and just give me the biggest grin! I was so happy and excited!! And then I remembered what I looked like and I just got confused! This baby liked me looking like a zombie-zoobie freak?! Weird . . . but he did. 

It was such a fun night and guess what?! We have two more Halloween parties to go to!! Hmmm . . . will we bring out the zombie-zoobie craze again, or will we go for something more nice? Any thing we decide will be awesome because Moydie loves Halloween and he won't let us go out of the house unless we look legit in our costumes. :)

Gluten-Free Bavarian Apple Spice Cake!



Before school started, I had been wanting to make this cake . . . Yeah, it's October and I finally found the time to make it.  Funny enough is that it didn't even take that much of my time.

 This was what Moydie saw when he got home . . . actually the first thing he saw was me, then he smelled the cake and looked over here.  

This cake is a fall treat! It didn't take long and it requires simple ingredients! (If you're a gluten-free baker like I am, I totally think sorghum flour, tapioca flour, and xantham gum are simple basic ingredients!)
Go ahead and try it!! Even if you're not gluten-free, it's a beautiful dessert for a lovely fall evening!

Ingredients:
DRY INGREDIENTS
1 cup sorghum flour
1/2 cup buckwheat flour
1/4 cup tapioca starch or potato starch (not potato flour!)
1 tsp xanthan gum
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp sea salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
1 cup light brown sugar, packed

WET INGREDIENTS
1 egg or tablespoon Ener-G Egg Replacer whisked with 1/4 cup warm water
1/2 cup  olive oil
1/2 cup applesauce
1/2 cup milk or  rice milk with 1/4 teaspoon light tasting vinegar added
2 Tbsp agave (or honey, if not vegan)
2 tsp vanilla

ADD-INS
1cup chopped apples
1/2 cup sliced toasted almonds
1tsp cinnamon
1 Tbsp sugar

TOPPING
1/2 cup icing sugar
1 Tbsp. milk
1/4 tsp almond extract

Directions:
Preheat oven to 350°F.

Line a 9-inch round cake pan with greased parchment paper.  In a large mixing bowl, use a whisk to combine your dry ingredients together and set aside.

In a smaller bowl combine the wet ingredients and mix well.  Add the wet into the dry ingredients and stir until a smooth batter forms. If you need a tad more liquid add a tablespoon of milk at a time to achieve a smooth- but not too thin- cake batter.  Add  the apples and toasted slivered almonds(keep some for the top).  Scoop the batter into the prepared cake pan and smooth evenly. Combine the cinnamon and sugar and sprinkle on top.

Bake in the center of the preheated oven for 35 to 45 minutes until golden around the edges and firm in the center. Use a cake tester to test for doneness. Timing might also be influenced by the size of your chopped apples or variations in your oven temperature.Cool on a wire rack. 

Mix together the topping ingredients and drizzle over top and serve.

This cake freezes well and reheats beautifully in the microwave.

BYU Cross Country Season 2012 So Far

 I Love Moydie!

This cross country season has been unlike any other! It's my fourth year being on the team, but since I've been injured a ton, this is my third cross country season.  

My first race was the BYU Autumn Classic on Sept. 14th and it was a great home opener!  I placed 4th in a sea of about 60 girls and I was BYU's first runner!! I was so happy and it felt great to race!  The course was a 3 mile course (just short of a 5K) and my time was 17:23.  Not bad.

My second race was in Toledo that next weekend.  I placed 32nd in a sea of about 172 girls and I was BYU's third runner.  Natalie Shields was first and I was .4 sec behind Michaelanne Laurent, our second runner.  This course was a 4K and I ran it in 13:57.  My Mom and grandparents and cousin were able to come, too!! It was so fun to see them!!
 Here's all of us before the Toledo race.  You see those bright yellow calf sleeves?! Yeah, they're cool and this was the first time we got to wear them and we wore them at each race after, too!

My third race was just barely this last Friday, the day before Moydie's Tough Mudder.  Yeah, crazy huh?  I took off on a plane immediately after my race on Friday, so I could be there for Moydie's race.  This last race was in Wisconsin!! Wahoo!! The last time I was there, I was racing in December and it was frigid cold.  Luckily, it's not like that yet and the weather was perfect! We raced on a cross country course that was made especially for cross country.  It was amazing! And this race was a 6K (3.75 mi), yeah, it was long.

 This is Mary.  She is the BEST TRAINER EVER! It's because of her that I'm not injured this season.  I love her!
 I LOVE MY DAD!! He Came To The Race!! It was so fun for him to be there with me.

On Friday, we raced at 12 pm sharp.  And it was so long, but so fun!! The course was fun and perfect and the race was crazy!! There were about 350 girls in this race and they were all the top girls on their team.  There were 49 team in this race.  Crazy, huh?  I finished in 147th place with a time of 21:04 and I was third again for our team: behind Natalie and Michaelanne.  

I am so thankful to be healthy and running well.  I love to run and to help our team do the best we can.  

Our next race is CONFERENCE!!! It's gonna be in Portland on Oct. 27th and Moydie's going to be able to come!! Wahoo!!

THE TOUGH MUDDER



Yep, that's right, my baby completed the Tough Mudder yesterday. 
My husband is a stud!! 
If you don't already know, the Tough Mudder is a 12 mile military obstacle course.  It's intense. 
7 months ago, my friend (above in the picture with us) found out about the Tough Mudder and invited us to do it with her.  Since I'm still in season for XC for BYU I couldn't do it, but Moydie was stoked about it!! So we started training . . . and training . . . and training. 
That hard training paid off, because Moydie was flying through that course like it was nothin'!!
He completed the course in less than 3 hours!!! There were 21 obstacles and luckily, I was able to see all of them!! It was so much fun!! He did soo well!!

 Ok, this obstacle was crazy!! It's called Trench Warfare.  You can see his legs going through the tunnel.
 Yeah, this is what's over him as he's going through that tunnel . . . creepy, right?
He's super happy to get out of there!! He said it curved and that it was completely dark!! No Fear!
 This was one of my favorite obstacles to watch . . . Doesn't he look super strong?! And hot?! And handsome?!

1st Year Anniversary Day!!!

Monday, August 13th was our 1 Year Anniversary!!! (Day 4 of our epic Anniversary Adventure in St. George).  So what did we do?  That's right, we went ROCK CLIMBING!! Moydie set us up with a guide to show us how to lead climb and do multi-pitch stuff!! It was soo cool!! My favorite part was repelling down 160 ft! Here's the footage . . .

What a great ending to an amazing trip that my loving husband Moydie planned for us! He did a fantastic job of knowing what we would enjoy doing and it couldn't have been more perfect!!!

1st Anniversary Get-Away Adventure!!! (Day 3)

Sunday, the 12th of August, was sooo relaxing!  We woke up early to go to church at 9 and I was so paranoid about being late that I woke up super early and so then I was ready to go before Moydie was even dressed lol so . . . I took some pictures lol

After church we just chilled . . . we read comic books on the front porch, we ate amazing stir fry, and we toured some church history sites!
